Street Corn Recipe

Serving Size: 4-6 people

Ingredients:

  • 5 ears of corn, trimmed off the cob (or 2 - 15 oz cans of corn, drained)
  • 1 small shallot
  • 1 tablespoon lime juice
  • 2 teaspoons of Richmond Table - Everyday Taco Seasoning
  • 1 teaspoon of salt
  • 1 tablespoon of oil of choice (olive, vegetable, or butter)
  • Garnish: Cotija cheese and cilantro

Directions:

  1. Dice shallot into small pieces.
  2. Add oil to skillet and turn on medium-low heat.
  3. Once heated, add diced shallot and cook for 1 minute. 
  4. Stir in corn, lime juice, salt, and Everyday Taco Seasoning to skillet. You can add more Everyday Taco than the recipe requires if you’re like us and want a little more kick in the flavor!  
  5. Cook for 7-10 minutes or until desired doneness. 
  6. Turn off heat. 
  7. Garnish with crumbled Cotija cheese and chopped cilantro. Serve while warm.

    Details:

    I feel like street corn is one of those dishes that you see frequently in restaurants but not frequently enough at home. I’m not sure of the reason though. It’s an easy cook, and everyone always loves it! So next time you’re making tacos or your favorite Southwest-inspired dish, add this delicious side to your meal for a great crowd pleaser!
