Ingredients:
- Chicken wings serving size (however many you want to eat!)
- Richmond Table - The Good Parts Barbecue Blend
Directions:
- Heat smoker to 250 degrees.
- Season the chicken wings on both sides with a layer of The Good Parts Barbecue Blend. Use more or less depending on how much seasoning you prefer your wings to have, but you want an even coating over the entire wing.
- Place chicken wings into preheated smoker or oven. Please ensure wings are not touching each other.
- Cook until wings are between 175 - 185 degrees. It should take about 1 hour.
- Optional: Increase heat in grill or broiler to high for the last 10 minutes to get the skin extra crispy.

If you are wondering about the high temperature for the chicken, don’t worry about overcooking the wings. Typically, chicken is cooked to 165 degrees. If you cook chicken breasts too far above that, you will quickly get a dry, overcooked, and unpleasant meat. Chicken wings have a high enough fat content that you actually want to cook them to a higher temperature. Once you hit 175 degrees, the connective tissues start to break down and you’ll end up with tender, fall off the bone chicken wings. The ceiling here is 190 degrees though. Once you go above that, your wings will seem overcooked and dried out. That’s why we have the sweet spot between 175 -185 degrees.
